Mexican Corn Salad with Chipotle Dressing

Ingredients

Adjust Servings
5medium ears fresh corn, shucked
½Tablespoon of Butter
¼ Teaspoon of salt
¼ Teaspoon of Pepper
3Tablespoons of diced red onion
3Tablespoons of cilantro minced
4 - 5small radishes cut into thin slices and then in half
1 ripe avocado
¼Cup of crumbled cotija cheese (or any white cheese like Panela if you have access to it)
Dressing
½ Cup of mayonnaise
1 Juice of lime
1Tablespoon of chipotle sauce You can add more if you like it on the spicier side
½Teaspoon of Paprika
½Teaspoon of Chili Powder

Directions

1.

Preheat your grill whether it is inside or outside for the corn.
Mark as complete

Melt the butter and with a brush spread some butter on each ear of corn. Sprinkle some salt and pepper to taste on each one.

Place on the grill and cook for 10 - 15 minutes until they are charred. Remove from the grill and let them cool.
Meanwhile, prepare the dressing.

Remove kernels off of all five ears of corn and place them in a large bowl.

Add the onion, cilantro, radish, avocado, and cotija cheese to the bowl. Gently add some of the dressing and toss a bit.
Serve and enjoy!

In a small bowl add the mayonnaise, juice of 1 lime, chipotle sauce, paprika, and chili powder. Mix well until combined.
