Mexican Corn Salad with Chipotle Dressing

5medium ears fresh corn, shucked | |
½Tablespoon of Butter | |
¼ Teaspoon of salt | |
¼ Teaspoon of Pepper | |
3Tablespoons of diced red onion | |
3Tablespoons of cilantro minced | |
4 - 5small radishes cut into thin slices and then in half | |
1 ripe avocado | |
¼Cup of crumbled cotija cheese (or any white cheese like Panela if you have access to it) |
Dressing
½ Cup of mayonnaise | |
1 Juice of lime | |
1Tablespoon of chipotle sauce You can add more if you like it on the spicier side | |
½Teaspoon of Paprika | |
½Teaspoon of Chili Powder |
Directions
1.
Preheat your grill whether it is inside or outside for the corn.

Melt the butter and with a brush spread some butter on each ear of corn. Sprinkle some salt and pepper to taste on each one.

Place on the grill and cook for 10 - 15 minutes until they are charred. Remove from the grill and let them cool.
Meanwhile, prepare the dressing.

Remove kernels off of all five ears of corn and place them in a large bowl.

Add the onion, cilantro, radish, avocado, and cotija cheese to the bowl. Gently add some of the dressing and toss a bit.

Dressing:
In a small bowl add the mayonnaise, juice of 1 lime, chipotle sauce, paprika, and chili powder. Mix well until combined.
