Peppermint Chocolate Bark

A perfect treat for the holidays. Very easy to make and it looks beautiful whether you make them as a gift or serve them to your family and friends. Who can resist this perfect combination of white chocolate, dark chocolate, and peppermint?

1 cup White Chocolate good quality
1 1/2 cups Semi sweet chocolate chips
1/3 cup crushed Candy Canes
1/4teaspoon Peppermint Oil



Line an 8x8 baking pan with parchment paper and set aside.
Begin by breaking the candy canes if you haven't done that already. You can use a food processor, or manually break them with a rolling pin by smashing them inside a ziploc bag.

In a small bowl, melt the dark chocolate in the microwave in 20 second intervals, until completely melted. Stir occasionally and make sure you don’t burn it.
Place the chocolate in the pan and spread it out evenly with a spatula. Let it set partially for a few minutes, but make sure it’s not completely set and hardened. If you touch it, the chocolate should still feel melted so the two chocolates stick together and don’t break apart. (To let the chocolate set quickly, I placed it in the refrigerator for 3 to 4 minutes, although this also depends on how cold your refrigerator is.)
Mark as complete

Refrigerate until hardened, or for at least 30 minutes. Remove from the refrigerator and baking pan and begin cutting the pieces. The idea of these barks is to cut them into uneven pieces. Start with the edges and continue with the center.

I recommend using good quality white chocolate in bar form instead of chips.
