Soft Lime glazed sugar Cookies

These lime cookies are super soft and perfect year round. Very easy to make and delicious, they almost melt in your mouth. You can taste the cookie bursting with citrus flavor. Very refreshing and a guarantee for all guests.

100 grams butter softened
1/2cup sugar
1/2cup powdered sugar
1 egg
8 Tablespoons oil
1 zest of lime
2 1/2cups all purpose flour
1/4teaspoon baking soda
1/4teaspoon cream of tartar
pinch of salt
2cups powdered sugar
1/4cup lime juice
2 - 3Tablespoons minced, grilled, or regular pistachios



Cream the butter until light and fluffy.
Mark as complete

Add in the sugar and the powdered sugar little by little. Mix until combined.
Mark as complete

Add in the egg and mix until combined.
Mark as complete

Add in the oil and lime zest. Little by little sift the rest of the dry ingredients and mix until combined. Try not to overmix.
Mark as complete

Cover the dough with plastic wrap and place in the refrigerator for 45 minutes. Remove from the refrigerator and begin making cookies.
Preheat your oven to 350 degrees and line two baking trays with parchment paper.

Using a scooper, scoop the dough and place on your baking sheets.

Place in the oven for 15 - 20 minutes or until the edges look a bit golden. In the meantime, make your glaze by mixing the lime juice with the powdered sugar.
Remove your trays from your oven, and let them cool down.

With a spoon drizzle some glaze over the top and let it spread on its own.
Sprinkle some pistachios on top for decoration. Enjoy!
